6 boneless pork loin chops (4 oz)*
1 tsp garlic powder ground black pepper to taste
2 tbsp extra virgin olive oil
1 medium onion, thinly sliced
½ cup balsamic vinegar
1 can of no salt added diced tomatoes
1 tsp dried basil
1 tsp oregano
1 tsp dried rosemary
½ tsp dried thyme


  1. Season pork loins with pepper and garlic powder.
  2. Heat olive oil in a medium skillet, and brown the onion and seasoned pork loins.
  3. Pour tomatoes and balsamic vinegar over pork loins, and season with basil, oregano, rosemary and thyme.
  4. Simmer until pork is cooked through.

*may substitute pork for chicken breasts.
